Ann, this is one of the best looking dishes I've seen in AGES!!! My mouth is watering at the colors, and, being another Rodin groupie, I know I would love this dish! I've never seen these eggtoes here, and I just got back from my farmer's market. I'll have to look in the Middle Eastern markets around town. Thank you, thank you, thank you!

Mary -- I did indeed! It's such a funny word!

Luisa -- Thanks! I'll keep them up, just for you (not because the produce is amazing, of course ;-)

Tijen -- Thanks! I love greetings from the Aegean!

Julie -- That's really strange. I think they must be some new cultivar that's hitting the markets this year for the first time. They're really stunning. You should really try and catch that program on PBS, they feature a market in Baltimore that looks simply amazing and that I would love to visit. I'd love to hear your thoughts on how it's portrayed.

They're gorgeous! I'd never heard of orange eggplants before reading your post earlier in the week but that night I picked up a copy of Horticulture Magazine and there were orange eggplants again. Who knew? And I just saw a recipe for pickled eggplants which of course totally made me think of you.

I completely agree about how great markets are and morning at the market is the best time. Especially in summer when they become crowded and hot later in the day. Of course, I'm totally seduced by all that produce and constantly end up buying more than I can use up in a week.

The Union Square Greenmarket blows the doors off anything here in Chicago. Which surprises me, because this is such a great city for food. I haven't been a big fan of eggplant in the past, but a whole raft of dishes at a couple of our favorite Chinese restaurants here are beginning to convert me. And you've almost got me ready to try slow cooked couscous, Ann---I usually just use the 5-minute speed cooking approach.

Kalyn -- me neither! aren't they cool?!?

Jennifer -- I hope so too, I'd really love to see it again!

Andrea -- OMG, totally!! The Boy and I were so surprised! Uh, which means, obviously that I was watching Top Chef last night too, I'm not a saint ;-)

Guten Tag Wildschwein! -- Thanks for stopping by -- I bet this would be amazing with tomatoes, or, like in this recipe, maybe just top them off with little tomato hats!

Lydia -- I hope you find them if only to gaze upon them. They're so beautiful!

Christina -- Good! glad you don't mind me being a grammar nazi. It's one of my nicknames at work (just kidding, it's actually style nazi)... Anywho... I bet you could grow these, they're so pretty! If you want one of the lamb recipes I'd be happy to email them to you, just let me know.

I love the idea of stuffing the eggplants with ground lamb and it looks like the pasta works as a good substitute here. I keep thinking that the eggplants in my garden (Japanese and a lovely pinkish Italian variety with the mildest white, seedless flesh imaginable) are reaching a peak in their production, but the mighty plants keep proving me wrong. This looks like another great preparation. Thank you.

And, no worries on the grammarian in you. I love having critical readers!
